Baking 101:Tips for beginner


Assalamualaikum,

Oh my,first entry for baking site.Nervous.Berpeluh mengalahkan orang lari marathon.As the first entry mar taknak straight to recipe.Kita simpan dulu.Tajuk entry pun dah straight foward.So kira hari ni mar share tips that i get from youtube and from my past baking failure.

Let's get started!

Okay, tips 1, kena tau apa itu granulated sugar,castor sugar and sugar if it stated on the recipe.Basicly there are all the same thing.Jangan ambil mudah ye bab-bab macam ni sebab it happened to me.Masa first time mar nak baking mar nak bake brownies and tak jadi langsung mar punya brownies.Rasa die manis giler.Mar refer balik recipe and try to find my mistake.Rupanya mar salah guna gula.Mar guna gula biasa dan bukan castor sugar.Dalam recipe tu cakap 'sugar',since ilmu baking cetek so mar pakai gula biasa.There are differences between those two sugar.

Satu lagi yang buat orang keliru some recipe kata granulated sugar.Kita start pening,pergi kedai tak jumpa granulated sugar.Some countries panggil granulated sugar,some countries panggil castor sugar including Malaysia.So lepas ni jangan pening ke hulu ke hilir cari granulated sugar.It is the same thing.Other than that, Baking soda and soda bicarbonate is also the same thing.Same situation mcm kat atas ni.Some place panggil baking soda, some panggil soda bicarbonate.

Tips 2, kena bagi credit to this youtube channel-Everyday food.Dalam channel ni ada satu playlist called kitchen conundrums.You can get many techniques and tips kat situ.So i learn how to bake perfect chocolate chip cookies.Actually there are 3 type of cookies.Type tau bukan flavour.Thin and crispy,soft and chewy and cakey.Nak tau macam mana check vid diorang okay.Mar ingat chef tu kata dalam vid tu Baking Powder for Puff and Baking Soda for Spread.This tips korang boleh apply to many type of cookies.

Tips 3, as beginner korang kena tau how to measure wet ingredients and dry ingredients.Okay wet ingredients macam susu,air,minyak atau anything that at  liquid state.While, dry  ingredients macam tepung,sugar and baking powder.Kalau dry ingredients kita measure guna measuring cups so its kinda easy tapi wet ingredient, mar ada jumpa some recipe  suruh guna dalam ounce or gram.However most of the time mar jumpa measure pakai cups.Kat sini banyak orang keliru, ada yang measure wet ingredients guna measuring cups including me.Haha, masa first time buat carrot cake.It is a big NO!

Do not ever do that.You must use the measuring jar or american panggil pyrex (it is a brand) macam gambar kat bawah ni



Mar punya takde lah kaca macam ni.Mar rasa brand ni ada kat Malaysia.Kat sini korang kena check type liquid and korang akan jumpa cups.Benda ni penting so kena ada dalam list barang baking korang.So lepas ni measure wet ingredients guna ni ok.

Tips 4, There are 2 type of butter,salted and unsalted.If you want to bake cookies or cake that involves butter,better you use unsalted butter.Kenapa kena guna unsalted butter? Because you can adjust the amount of salt.This happened to me,mar try nak bake m&m cookies however failed.Cookies mar a little bit salty because mar guna salted butter at that time.Mar tak paksa korang nak guna salted butter because it depends on you preference.However if you not willingly to take risk for the taste better use unsalted butter.

Tips 5, apa nak buat if telur ayam kat rumah saiz medium tapi kita perlukan telur saiz besar?Ini mar ambil dari exprience mar sendiri.Mar nak buat chocolate cake at that time and mar suruh adik mar beli telur and dia main beli je lah telur ayam tanpa tengok saiz.Balik tu mar tengok telur ayam tu kecik dari telur ayam yang biasa my mom beli kat pasar.Mar pening lah nak buat apa.Mar search kat google berat telur ayam besar kat america.Since mar guna recipe from american youtubers.Korang boleh refer berat tu kat sini.Mar just do some simple mathematics macam darab kan dengan jumlah yang diperlukan.But before buat tu timbang kan berat telur ayam yang korang beli tu without shell baru match kan.

Tips 6,this is very important!Do not ever keluarkan your cake dari acuannya right after keluarkan dari oven.From my expriences,mar keluarkan and kek mar terbelah kepada 3 daerah and beberapa daerah kecil.Sedih je tengok kek pecah macam tu.Ingat,rehatkan kek dalam acuannya for about 15 minutes and cookies for about 2 to 3 minutes.Cupcakes pun macam tu.Sebabnya untuk kek atau cookies tu sejuk dan bagi kek betul2 masak sebab pan tu still panas lagi.

Tips 7,it is about chocolate.If you nak melt chocolate please do not directly melt dalam periuk and letak atas api.Kenapa? Supaya chocolate tak mudah hangus(not from profesional,ikut mar rasa je) Cara proper die gunakan method double boiling or bain marie(profesional terms) However cara ni pun ada beberapa perkara kena take note.But first mar explain double boiling ni apa.Korang kena sediakan periuk yang berisi air dan letakkan bowl untuk isi chocolate korang tu atas periuk yang berisi air tadi.

Perkara yang kena take note,pastikan air yang dalam periuk takkan kena bahagian bawah bowl tu.Secondly,make sure not overcooked the chocolate.Let say korang just nak melt chocolate tu maybe for decoration atas kek,it is just enough until chocolate tu completely melt.If korang nak buat tempered chocolate korang kena melt the chocolate until reach certain temperature.

Tips 8, do not ever ever thinking to kurangkan your ingredients or lebihkan.Mar cakap ni in term of measurement.Kurangkan tu boleh in terms of flavoring such as sugar or vanilla essence or even cinnanmon powder but ingredients yang important macam butter or flour jangan buat okay.Lebihkan lagi serius.Mar pernah terlebihkan butter dalam buat brownies and brownies mar lembik.even dah masukkan dalam oven few times.Take every measurement betul2.Baking is different than cooking.

Tips 9,ini general.Pastikan barang korang free from grease or water.Cuci betul2 dan lap bersih2.Tips ni sangat penting if korang nak buat macaron.Macaron ni leceh sikit.

Mar rasa itu je kut tips yang mar kumpul buat masa ni.If ada tips lagi mar akan share dengan korang lagi.Lepas ni jangan lah takut nak bake especially perempuan.Takut  sangat.Oh if korang serious dalam baking belajar lah buat from scratch.Dari situ korang akan learn banyak benda.Jangan risau kalau first time buat tak jadi.Jangan fikir korang takde talent just because fail.Korang ingat chef and profesional baker tu tak pernah fail ke masa first time diorang buat cake.Skill and techniques need practices dear.

It's okay if orang kata korang punya kek buruk ke apa(yang buat ni jenis cemburu sebab tak reti bake),as long korang buat dengan bersungguh-sungguh and rasa sedap.Rasa tu penting tapi rupa pun penting jugak.Tapi kena kuasai rasa dulu,rupa letak no.2 pun takpe.Mar pun kena banyak belajar lagi.If rezeki korang banyak korang masuk lah kelas baking.Tambahkan lagi ilmu ^-^
